A recent trend circulating on TikTok claims that soaking pumpkin seeds in salt water can facilitate better digestion and nutrient absorption. While this assertion isn’t completely unfounded, experts caution that its advantages may be exaggerated.
Why Soak Pumpkin Seeds in Salt Water?
Although pumpkin seeds can be enjoyed raw, many opt to roast them for an enhanced flavor profile. A viral TikTok video suggests that soaking the seeds in salt water before roasting is essential.
According to the video, this soaking process is intended to reduce phytic acid levels, a compound that can hinder nutrient absorption. Phytic acid is prevalent in various plant foods, including nuts, grains, and legumes.
Nutritionists, however, frequently label phytic acid as an “anti-nutrient,” as it impacts the body’s ability to absorb essential vitamins and minerals.
Amanda Sauceda, MS, RD, a nutrition lecturer and owner of The Mindful Gut, explains, “We term them anti-nutrients due to their potential to block our absorption of vital nutrients.”
Can Soaking Pumpkin Seeds Boost Digestion?
While the idea of soaking pumpkin seeds may seem like an easy method to enhance digestion, scientific backing for this practice is limited.
Only one recent study has looked into how soaking nuts affects the availability of minerals and phytate levels. Following a 12-hour soak in saltwater, researchers observed minimal changes in phytate concentration and no significant enhancements in mineral absorption.
Despite what the TikTok video claims, Matthew Landry, PhD, RDN, from UC Irvine’s Joe C. Wen School of Population & Public Health, notes, “The evidence indicates that soaking does not considerably enhance nutrient bioavailability or digestion.”
However, he acknowledges that soaking in water could soften the seed’s exterior, potentially making it easier for your body to digest and access the internal nutrients.
What to Know About Soaking Pumpkin Seeds
Fortunately, pumpkin seeds still maintain significant nutritional value whether or not they are soaked. “You can still reap the benefits of your seeds, particularly their fiber content,” Sauceda notes.
Rich in vital nutrients like magnesium, potassium, and zinc, pumpkin seeds also deliver heart-healthy fats and antioxidants, making them a nutritious addition to your diet.
